RUTH’S CASHEW CHRISTMAS COOKIES

These were an annual tradition in our family, with my grandmother Ruth always sending a box of these chunky bits of delicousness!

½ cup butter

1 cup brown sugar, firmly packed

1 egg

½ teaspoon real vanilla

1/3 cup dairy sour cream

¾ teaspoon baking powder

¾ teaspoon baking soda
-
¼ teaspoon salt
-
2 cups sifted flour
-
1 – ¾ cups whole or halves cashew nuts, salted
Preheat oven to 400 degree Fahrenheit.
Cream butter and sugar until light and fluffy.
Beat in egg and vanilla.
Add sifted dry ingredients alternately with sour cream.
Carefully fold in nuts. Drops by teaspoonful onto greased cookie sheet.
Bake 10 minutes at 400 degrees.
Cool and frost with butter frosting.
Top each cookie with a cashew nut.
Golden Butter Frosting:

3 Tablespoons liquid coffee creamer or evaporated milk

¼ teaspoons real vanilla

2 cups sifted confectioners (powdered) sugar
